Our spaghetti are of a larger diameter than the classics. We believe that a greater thickness gives greater emphasis to any of our natural sauces with which they are seasoned.
We preferred to increase the size of the classic Fusillo format to increase the contrast between the greatness of the shape and the delicacy of our handmade sauces.
Our Gnocchi pasta provides a hearty, dense texture and is versatile in any of our natural sauces with which they are seasoned.
Linguine is type of pasta – like fettuccine and trenette, but elliptical in section rather than flat. It is about 4 millimetres in width, which is wider than spaghetti but not as wide as fettuccine.
The bigoli or
are a long pasta, similar to a big spaghetti, originating and widespread throughout the Veneto and in eastern Lombardy. The most famous sauce that accompanies them is the rich duck ragout.
